pie [pahy]: n. A pie is a baked dish which is usually made of a pastry dough casing that covers or completely contains a filling of various sweet or savoury ingredients. Pies can be either “filled”, where a dish is covered by pastry and the filling is placed on top of that, “top-crust,” where the filling is placed in a dish and covered with a pastry/potato mash top before baking, or “two-crust,” with the filling completely enclosed in the pastry shell.

January 23rd marks National Pie Day. With this in mind, we at J&O Fabrics felt it only right to showcase some of the tasty pastries that get our own mouths watering and eyes popping. From apple and pumpkin, to cherry and lemon meringue, fruit pies have been satisfying the sweetest tooth and biggest bellies since the Egyptian Neolithic period with the cultivation of village life and discovery of new craft techniques.
In Ancient Egypt, early pies were called ‘galettes’ and consisted of ground oats, wheat, rye or barley wrapped around honey. These galettes developed into a form of early sweet pastry and were even documented through heiroglyphics on the walls of Pharoah Ramesses II in the Valley of the Kings. From Egypt, the concept of the pie made its way to the Greeks, then to the Romans, then eventually to England where they were filled more with savoury meats than sweet honey or fruit. Pie found its way to America with the first English Settlers (pilgrams) and over the years, evolved to become what is known today as “the most traditional American dessert”. Pie has become so much a part of American culture throughout the years infact, that we now commonly use the term “as American as apple pie.”
